Bone marrow can be eaten on its own, or turned into a sauce like this one, which is great on roast beef sandwiches, smoked brisket, tacos or appetizers.
¼ cup bone marrow (obtainable by boiling or roasting beef marrow bones and scooping out the marrow)
¼ cup grated horseradish root
½ cup crème fraîche
1 Tbsp mustard
1 tsp white wine vinegar
Salt and pepper to taste
Combine all ingredients and enjoy.
